By establishing La Banca del Prosciutto, or Ham Bank, Carlo Dall’Ava has made San Daniele, a small town in Italy’s northeastern Friuli region, a meeting place where fine ham producers from all over Europe can come to swap information. Drying and salting legs of pork to preserve them for as long as possible is always a technical challenge. The aim of the Bank is to bring together, in what it calls a ‘symbolic mosaic,’ hams from the areas where the tradition is most rooted—Italy, Spain, France, Istria, the Balkans. At this workshop you’ll taste a Parma, a Jamón Ibérico Bellota De Guijuelo, a Noir de Bigorre from the Basses-Pyrénées, an Istrian ham and a San Daniele.

To accompany these hams we’ll have the splending and sparkling Franciacorta wines of Contadi Castaldi. The winemaker Gian Luca Uccelli will present the New Generation Edition, and the new labels of Satèn, Rosé, vintage Pinònero Natura and Brut.

Online ticket sales are now closed. During the days of the event (September 22-26), all remaining tickets will be available at the Event Reception on the ground floor of the Regione Piemonte building in Piazza Castello and at the reception of Eataly Torino Lingotto. Tickets for the conferences will also be available directly at the Carignano Theater.
