Anthropologist Claude Lévi-Strauss claimed that in gastronomy, some foods were worse to think about than to eat. This food prejudice has shaped the fate of offal, the “fifth quarter,” in culinary history. This workshop is intended to shake off such prejudice, thanks to the skill of an exceptional chef, Arcangelo Dandini, who will be sharing his knowledge of sweetbreads, pajata and other offal that is good to think about as well as good to eat.
To drink, a selection of wines from Allegrini of Fumane di Valpollicella (Verona).


Online ticket sales are now closed. During the days of the event (September 22-26), all remaining tickets will be available at the Event Reception on the ground floor of the Regione Piemonte building in Piazza Castello and at the reception of Eataly Torino Lingotto. Tickets for the conferences will also be available directly at the Carignano Theater.
