The Terra Madre Kitchens
Colors, smells and flavors from all over the world, with over 60 chefs from the restaurants, osterias and canteens, all brought together by their support for the food communities, using products from their native lands with creativity and passion. That’s the Terra Madre Kitchens!
A mixture of languages and culinary knowledge with characteristic dishes from every corner of the globe, each recipe a journey. Come and discover the spices of Africa, the bright colors of the East, the intense flavors of South America, the specialties of Europe and the best gastronomy of North America & Oceania.
On each day of Terra Madre Salone del Gusto, the chefs will take turns in the kitchens, sharing tools and socializing. They’ll be helped by the staff of Slow Food, who’ll also need to make sure they find all the necessary ingredients: while some cooks may bring everything with them, other raw materials will be sent from abroad, on sale or available to taste at the exhibitor’s stand, while for more common ingredients a quick trip to a local store may be necessary.
The plates – one per chef, prepared in hundreds of portions, will be the most authentic versions of the original recipes from each country represented, a unique experience for everyone who comes to pay a visit: to repeat such a gastronomic tour, you’d need to travel to every continent of the planet, and have good enough look to find the right places, and the right chefs.
There will be two Terra Madre Kitchens in Valentino Park this year, one which brings together Africa and Europe (conveniently located between our European and African exhibitors!), and another which sees the Americas and Asia united, where the American and Asian exhibitor spaces meet.
